• ok. 5-6 jabłek
• 1,5 szkl mąki pszennej
• 1 szkl mleka (dobrym pomysłem jest też kefir lub kwaśne mleko)
• 2 jajka
• 1 łyżka octu (opcjonalnie - zapobiega wchłanianiu tłuszczu)
• 2 łyżeczki cukru waniliowego
• szczypta soli
• cukier puder do posypania
• olej do smażenia
Białka ubić na sztywno ze szczyptą soli. Żółtka wymieszać bardzo dokładnie z mąką, mlekiem, cukrem waniliowym i octem. Na koniec delikatnie połączyc białka z ciastem. Całość ma mieć konsystencję śmietany więc uzupełnić ewentualnie mlekiem lub mąką. Jabłka obrać. Pokroić na 1 cm plastry z których powycinać gniazda. Olej rozgrzać. Jabłka maczać w cieście i smażyć na rozgrzanym tłuszczu z dwóch stron. Upieczone odsączać na ręczniku papierowym układając pojedynczymi warstwami na talerzu. Posypać cukrem pudrem.
